Mudgee-based Three Tails Brewery has teamed up with Indigenous-owned native foods company Indigearth to produce a small-batch beer that highlights native Australian ingredients.
The Lemon Aspen Sour Pale combines wild-foraged yeast from the Illawara with organic malt from Voyager in the New South Wales Riverina, and Indigearth’s native lemon aspen – a citrus sourced from Far North Queensland. Known for its sharp lime and grapefruit-like profile, the flavour imparted from lemon aspen packs a punch, balanced by notes of eucalyptus, grapefruit and honey.
Three Tails Brewery Co-owner, Kerrie Abba, said: “We’re incredibly proud to have partnered with Mudgee’s own Indigiearth to make something truly special that really celebrates both Mudgee’s culinary scene and Australian native ingredients.
“Our collaboration beers have now become part of the Three Tails’ DNA, showcasing everything we love about being a boutique brewery – our ability to innovate, collaborate and highlight incredible produce.”
For Indigiearth, the project reflects a growing interest in native ingredients within the drinks industry.
Indigiearth Founder and Ngemba Weilman woman, Sharon Windsor, who also hand-drew the lemon aspen sketch on the can, says: “It’s exciting to see native ingredients being embraced and utilised in many different ways.
“I’ve been in business in the native food space commercially for 29 years, sharing knowledge and culture through our food and botanicals. Native ingredients have always been here and we want everyone to embrace the beauty of what Mother Earth provides in its natural form.”
The new release is part of Three Tails’ continued focus on cross-industry collaborations, following its Two Worlds Collide series with Mudgee winemakers Robert Stein and Logan Wines, and other local collaborations such as the Mudgee Mochaccino brewed with Spencer Cocoa and Acreage Coffee.
The Lemon Aspen Sour Pale is now available at Three Tails Brewery and from select Central West New South Wales suppliers.
