Co-Conspirators Brewing debuts The Experimental Matriarch

Co-Conspirators Brewing Company continues to push boundaries with its latest release, The Experimental Matriarch IPA created for the brewery’s upcoming Matriarch Day celebrations on Saturday, 11 October 2025.

The Experimental Matriarch brings together brewing science and hop creativity using SH-45 – a soon-to-be-released lager yeast strain renowned for its exceptional thiol-releasing and biotransformation potential.

This yeast has the unique ability to unlock bound thiols from hops, creating new layers of aroma and flavour compounds in a new experience for beers brewed locally in Australia.

The brew team layered a line-up of innovative hops: Superdelic, Nectaron, Alora, and Dolcita, paired with advanced hop products including Quantum Krush Terpenes and CO₂ hop extract to amplify and complement the yeast.  

All ingredients were sourced through Bintani, Cryer Malt, Ellerslie Hops, and Hop Products Australia (HPA).

The result is a vibrant IPA with citrus, grapefruit, passionfruit, sweet fruits, mango, guava, and something entirely new.

Deon Smit, Co-Director at Co-Conspirators said the team are confident that they are the first brewery in Australia to work with SH-45 – an achievement they are proud of.

“The clean malt base lets the hops shine, but the real story here is the way this yeast transforms hop compounds into fresh and unexpected flavours. It’s bold, fresh, and experimental – just like The Matriarch deserves,” he said.

With an ABV of 6.5 per cent, The Experimental Matriarch will debut at Matriarch Day – the annual celebration of the brewery’s iconic flagship Matriarch NEIPA.

The event showcases multiple interpretations of The Matriarch, including twists, double-strength versions, and West Coast spins.

Jacqui Sacco, Co-Director of Co-Conspirators said this year’s edition stays true to the Matriarch Day spirit.

“The Matriarch has always been about leading the charge. With this new experimental release, we celebrate our flagship beer and showcase what’s possible – when innovation, science, and creativity collide,” she said.

This Matriarch Day, held at the Brunswick Brewpub, promises limited release beers, a homebrew competition featuring the best brews from amateur brewers around the country, and live entertainment, food, and community celebrations.
