The two latest releases from Felons Brewing Co. signal Winter Solstice, with the brewery launching its annual Imperial Stout and its barrel-aged sibling Macadamia Moon.

Both brewed from a common starting point of dark crystal malts with rich notes of berry, liquorice and toffee, the two beers form the latest in what Felons’ Brand Director Dean Romeo has dubbed the Imperial Stout Odyssey.

“Think of it like our annual mission into the stout unknown. We’re not just chasing intensity – we’re out to discover new flavours, new ideas, and a little more personality each time,” Romeo stated.

Though the beers share a similar base, the result is two distinct expressions.

Bold and rich from the molasses that form its character, the 2025 Imperial Stout is the fifth annual stout release from Felons. The 2025 Imperial Stout offers roasted malt and dark fruit aromas, while the palate is layered with toffee, cocoa and aniseed, with a dry, lingering finish.

Felons Macadamia Moon

Its counterpart, Macadamia Moon, draws complexity from the barrels in which it was aged for six months – once used to mature Cape Byron Distillery’s macadamia liqueur. Packaged at 11.1 per cent ABV, Macadamia Moon has a distinct nose of toasted oak, caramel and vanillin, with molsasses coming through on the palate and hints of umami from the roasted macadamia.

Head Brewer Lincoln Gibbs describes the annual Solstice release as more than a seasonal offering, but an annual milestone for the Felons team.

“Brewing imperial stouts of this depth is always a feat. Each winter we return to our recipe book, reflect on what have we done in the past and ask ourselves, ‘What do we want to do next?’ This pair of beers brings us back in touch with past versions, and brings a piece of that history into the next,” he stated.

Both the 2025 Imperial Stout and Macadamia Moon will be available on tap at all Felons venues as of today. The beers will also be available to purchase online from Felons and at select liquor retailers across Australia.
