The ultimate Christmas dessert, beer jelly

Not sure what to make for dessert on Christmas Day? Well the good folks over at The Australian Brewery may just have the answer with their latest concoction, the beer jelly with a creamy frothy head.

A perfect palate cleanser set to rival your mum’s trifle, the beer jelly is perfect for a post-Christmas dinner treat or an afternoon cool down on the couch.

The Australian Brewery chef Sam Youngs said the dish is best created using fuller flavoured beers.

“Beer such as our own Pacific Pale Ale hold better with the added sweetness,” Sam said. “The slightly fruity flavours will have a lasting impact on your palette.”

You’ll need:
3 cans of pale ale
3 cups of sugar
1 packet of gelatin
1 tub of Dairy Farmers thickened cream

What to do:
1. Pour the pale ale into a large pot and bring to the boil.
2. Once your beer has boiled, flick it to simmer and add sugar gradually while stirring. Wait until each segment is fully dissolved before continuing to add more sugar.
3. The next step is to add the gelatin. This will form the jelly like state you’d be accustomed to with a trifle.
4. Pour the contents into warm schooner glasses to set and cool. After 15 minutes, put the glasses into the fridge until they’re ready to be eaten.
5. Add a layer of whipped cream to the top of the glass to replicate the frothy head of an ice-cold beverage.
